Healthy Pumpkin Spice Steal Cut Oatmeal

One of the goals this year is to lower my husband’s cholesterol.  He is the stereotype of a guy who exercises, is thin and looks super healthy, but actually has high cholesterol.  He just found out during a physical last month, so I’m trying to be a good wife by increasing his fiber.  That’s always tasty.  I’m starting with breakfast and made this warm winter oatmeal blend.  This recipe is just barely sweet, so you may need to add more honey or brown sugar if you need more sweetness.  Steal cut oats are my new favorite take on oats.

Pumpkin Spice Steal Cut Oatmeal Recipe

Ingredients

1 Tablespoon butter

1 Cup steal cut oats

3 Cups boiling water

1/2 Cup 2% milk

1/2 Cup canned pumpkin puree

1/4 Cup flaxseeds

2 Tablespoons Pumpkin Pie Spice (Allspice, Ginger, Cinnamon, Cloves)

2 Tablespoons honey

Directions

In a large saucepan, melt the butter and then add the steal cut oats.  Stir for 3 minutes until oats are toasty.  Add in the boiling water.  Reduce to medium heat and let it simmer for 20 minutes until the oats are thick and soft.

Add in the milk, flaxseeds, pumpkin puree, pumpkin pie spice and honey.  Stir and let simmer for another 10 minutes.

Scoop into a lovely bowl and sprinkle with a little cinnamon and brown sugar.  Add a cinnamon stick for extra cuteness.
