Fresh Juice

Haven’t been feeling well recently with all of the colds going around.  Our friends have been into juicing so we started too to get more vitamins.  It’s tasty and I feel like I have more energy when I drink a glass every day of the week, but I still got sick.   This Cuisinart juicer is a monster in squeezing every last drop out of an apple. Add a holiday straw and it’s a cheery breakfast!

Breakfast Quesadillas

I love quesadillas and I love breakfast.  So, when you combine the two, you can’t go wrong by me.  We first tried this at Home Restaurant in Atwater.  It was one of those delicious menu items that you know you can make at home…for less.  As long as you have some cheese, eggs and tortillas, you can make these.  I made this one with some leftover sausage that we had, chopped tomatoes, chopped scallions and cilantro.  I’ve made it before with bacon, luncheon turkey, leftover roasted veggies, and most any leftover meats or veggies.

I start by cooking the eggs in a light scramble.  I take that out and then add butter to a pan and the first tortilla and a small layer of cheese.  I let that melt a little, then add all of the chopped ingredients.  Add the egg, a little more cheese, and then the second tortilla.  When you’re ready (after about 3 minutes) and feeling brave, flip the whole thing over to warm the other side.  Slice into 6 slices and enjoy!
